1. Heat the oil in a deep frying-pan. Add the onion and fry until it is soft. Stir in the cabbage, a handful at a time, and, as it goes down, add the next.
2. Then stir in the tomatoes, vinegar, salt and pepper.
3. Reduce the heat to low and simmer for 15 to 20 minutes, or until the cabbage is cooked.
4. Stir in the sugar and cook for 1 minute longer. Transfer to a warmed serving dish and serve at once.
