Juice and grated rind of half an orange
1 tbsp green peppercorns in brine, rinsed
140 ml (1/4 pint) sparkling dry white wine
Salt and pepper
675 g (1 1/2 lbs) peeled prawns
140 ml (1/4 pint double cream
1. Put orange rind and juice, peppercorns, wine and seasoning into a bowl. Heat for 30 seconds on HIGH.
2. Stir in the prawns and heat for 1 minute on HIGH.
3. Lightly whip the cream, fold in, and heat for a further 1 minute on HIGH.
4. Adjust seasoning before putting into serving dishes. Garnish with the orange slices.
