Hearty Pea Soup

ingredients

serves 6
450 g (1 lb) split peas
1.7 litres (3 pints) boiling water or stock
2 leeks, sliced
2 medium onions, sliced
1 stalk celery, sliced
2 large carrots, sliced
225 g (8 oz) thickly sliced bacon, diced
1 large smoked sausage, thickly sliced or 225 g (8 oz) frankfurters or saveloys, thickly sliced
Sea salt and freshly ground black pepper
Low fat natural yoghurt

method

1. To cook the split peas in the microwave, cover them with boiling water and leave to soak for at least 1 hour.

2. Drain, place them in a large casserole and pour over 850 ml (l 1/2 pints) of the boiling water or stock. Microwave for 15 minutes on HIGH, or until the peas are soft.

3. Puree half of the cooked peas and return them to the casserole. Add the chopped vegetables, diced bacon and the rest of the boiling water or stock and microwave for 20 minutes on HIGH, or until the vegetables are soft.
