method
1. Arrange the skate wings in a casserole dish with the thin edges towards the middle. Cover and cook on HIGH for 8 - 10 minutes.
2. Leave covered while preparing the butter sauce. Heat a browning dish according to the manufacturer's instructions.
3. Add the butter and cook until golden. Add the capers and stir them in the butter for 1 minute.
4. Reheat until the butter is a nut-brown colour.
5. Add the lemon juice, parsley, salt and pepper and pour over the fish to serve. Garnish with whole sprigs of parsley if desired.
