method
1. Combine the garlic, sugar, oil, lime juice and cornflour in a large bowl. Stir in the pork and coat thoroughly with the garlic and lime juice mixture. Allow to stand in the refrigerator for at least 1 hour.
2. Heat the oil for frying in a wok and add the pork cubes. Cook, stirring frequently, for about 10 minutes until golden brown and cooked through. Drain and set aside.
3. Remove all except about 1 tbsp of the oil. Reheat and add the chillies and onions. Stir-fry for about 2 minutes.
4. Add the ground spices and fry for a further 30 seconds. Stir in the remaining ingredients and bring to the boil.
5. Add the fried pork to the sauce and heat through. Adjust the seasoning and serve.

Pork with Lime and Chilli recipe

I doubled the all the ingredients to get a stronger flavour but kept the same amount of pork,coconut milk and juice and rind of lime. Absolutely delicious!! tasted even better the next day.
