1. Skin all the chicken pieces and remove any fat. Combine the cornflakes, cheese, herbs, spices and pepper and spread out evenly on a sheet of greaseproof paper.
2. Melt the butter for 1 minute on HIGH and stir into the beaten eggs in a shallow dish. Dip the chicken into the egg and butter mixture or use a basting brush to coat each piece.
3. Put the chicken pieces in the crumb mixture and lift the ends of the paper to help toss the chicken, coating each piece evenly
4. Place half the chicken in a glass dish, bone side down. Make sure the thickest pieces of the chicken are on the outside of the dish to start. Cover them loosely with greaseproof paper. Cook on HIGH for 9-12 minutes.
5. Rearrange and turn the chicken over halfway through the cooking time, and remove the paper. Keep the cooked chicken warm while cooking the remaining chicken.
6. If necessary, cover the turntable with paper towels to reheat all of the chicken at once for 1 - 2 minutes.
