Red Cabbage and Mince Meat Sandwich

ingredients

1 round Turkish bread
7 oz (200 g) feta cheese
1 lb (500 g) tinned red cabbage
2 tbsp olive oil
1 lb (500 g) minced onion sausage
salt
pepper

method

1. Cut the Turkish bread into quarters. Slice so as to make a pocket. Be careful not to separate the top and bottom. Dice the feta cheese.

2. Drain the red cabbage using a colander. Heat the oil in a frying pan and brown the minced onion sausage. Preheat the oven to gas mark 4 (350° F or 180° C.

3. Fill the Turkish bread with the minced onion sausage, feta cheese and red cabbage. Season well with freshly milled black pepper. Place the Turkish bread in the centre of the oven and bake for approximately 15 minutes.
