Ice-Cream (Kulfi) recipe

ingredients

450 ml (15 fl oz) 2 cups Mango juice
150 ml (5 fl oz) 5/8 cup Double (heavy) cream
2 Tbs Sugar

method

1. Combine all the ingredients and spoon the mixture into six small moulds. Tightly cover with foil and put into the freezing compartment of the refrigerator.

2. Shake the moulds three times during the first hour of freezing.

3. When the mixture is firm and set, remove from the refrigerator and dip the bottoms quickly in boiling water.

4. Invert on to serving plates, giving the moulds a sharp shake. Serve at once.
