method
1. Wash and dry the Dover sole fillets. Melt the herb butter in a frying pan and saute the fish. Season with salt and lemon juice.
2. Peel and dice the onion. Peel and crush the clove of garlic. Melt the butter in a frying pan and saute the onions and garlic.
3. Peel the ginger, grate and add to the onions. Season with salt and pepper. Add the rice wine and soy sauce. Simmer on a gentle heat for approximately 5 minutes.
4. Stir in the creme fraiche. Arrange the Dover sole fillets and sauce on plates and decorate with herbs. Green fettuccine taste great with this dish.
