1. Melt the butter with the oil in a frying-pan. Add the garlic and ginger and fry for 30 seconds.
2. Stir in the onions and fry until they are soft. Stir in the chilli powder, turmeric, coriander and cumin and cook for 1 minute.
3. Add the seasoning and kidneys. Stir well to coat the kidneys, then cook, stirring occasionally, for 15 minutes, or until the kidneys are only faintly pink inside.
4. Transfer the mixture to a warmed serving dish and arrange the green pepper on top. Serve at once.
