Tomato Salad (Salade De Tomates)

Despite the name, this is one of the most popular hors d'oeuvre dishes in the French cooking repertoire.
Obviously the dressing varies from cook to cook, and if you prefer yours to be non-garlic, then the one suggested below can be amended and changed accordingly.

ingredients

4 servings
450 g (1 lb) Tomatoes, thinly sliced
2 Tbs Chives, chopped
1 Tbs Chopped fresh basil

for the dressing

50 ml (2 fl oz) 4 Tbs Olive oil
2 Tbs Wine vinegar
1 Garlic clove, crushed
Salt and pepper to taste
1 tsp French mustard

method

1. First make the dressing. Put all the ingredients into a screw-top jar and shake vigorously to blend.

2. Arrange the tomato slices, slightly overlapping, in a serving dish. Pour over the dressing, then sprinkle with chives and basil.

3. Chill in the refrigerator for 15 minutes before serving.
