Potato, French Bean and Tomato Salad (Salade Nicoise)

ingredients

6 servings
1 Small lettuce, separated into leaves
6 Medium cold cooked potatoes, diced
275 g (10 oz) 1 2/3 cups Cold cooked French beans, cut into lengths
6 Tomatoes, blanched, peeled and quartered
2 Garlic cloves, crushed
6 Anchovy fillets, halved
10 Black olives, stoned
2 Tbs Capers

for the dressing

50 ml (2 fl oz) 1/4 cup Olive oil
2 Tbs Wine vinegar
1 tsp French mustard

method

1. Arrange the lettuce leaves in a large salad bowl. Put the potatoes, beans, tomatoes and garlic into the centre of the bowl.

2. Combine all the ingredients for the dressing together, then pour over the vegetables. Garnish with the anchovies, olives and capers.
