Petits Pois a la Francaise (Small Garden Peas, French Style)

ingredients

serves 4
700 g (1 1/2 lb) Fresh garden peas,weighed after shelling, or frozen petits pois
Salt and pepper to taste
1 tsp ugar
1 Medium onion, thinly sliced
4 Lettuce leaves, shredded
25 g (1 oz) 2 Tbs Beurre manie

method

1. Put the peas, seasoning, sugar, onion and lettuce into a saucepan.

2. Pour over enough hot water just to cover the peas and bring to the boil.

3. Reduce the heat to very low, cover and simmer the mixture for 20 to 30 minutes, or until the onion is soft and the peas are very tender.

4. Stir in the beurre manie, a little at a time, until the mixture has thickened and is smooth. Simmer for 1 minute.

5. Remove from the heat and transfer to a warmed serving bowl. Serve at once.
