Quick-Fried Spinach with Shredded Pork

ingredients

2 servings
3 Tbs Vegetable oil
225 g (8 oz) Soy sauce
2 Tbs Pork fillet (tenderloin), cut into thin strips
1 Tbs Rice wine or dry sherry
1 tsp Sugar
1/2 tsp Black pepper
40 g (1 1/2 oz) 3 Tbs Vegetable fat
1/2 kg (1 lb) Spinach, trimmed and chopped
1 tsp Salt

method

1. Heat the oil in a large saucepan. Add the pork strips and stir-fry for 2 minutes. Add the soy sauce, wine or sherry, sugar and pepper and stir-fry for a further 2 minutes. Using a slotted spoon, transfer the pork to a plate and keep hot.

2. Add 25 g (1 oz) (2 tablespoons) of fat to the pan and melt it. Add the spinach and salt and stir-fry for 3 minutes. Add the remaining fat to the pan and stir-fry the mixture for a further 30 seconds. Using the slotted spoon, transfer the spinach to a warmed serving dish.

3. Increase the heat to moderately high and return the pork strips to the pan. Stir-fry for 30 seconds to reheat them thoroughly. Pour the pork and pan juices over the spinach and serve at once.
