50 g (2 oz) 4 Tbs Butter
1 Garlic clove, crushed
Salt and pepper to taste
1/2 kg (1 lb) Topside (top round) of beef, cut 2 1/2 cm (1 in) thick then into strips
4 Tbs Soy sauce
2 tsp Sugar
175 g (6 oz) Bean sprouts
2 Tomatoes, blanched, peeled and quartered
2 Green peppers, pith and seeds removed and thinly sliced
1/2 Tbs Cornflour (cornstarch), blended with 2 Tbs water
4 Spring onions (scallions), sliced
method
1. Melt the butter in a large frying-pan. Add the garlic, salt and pepper and stir-fry for 30 seconds.
2. Add the beef strips and stir-fry for 3 minutes. Increase the heat to high.
3. Stir in the soy sauce and sugar, cover and cook for 5 minutes.
4. Uncover, and stir in the bean sprouts, tomatoes and peppers. Re-cover and simmer for 5 minutes.
5. Stir in the cornflour (cornstarch) mixture until the mixture thickens.
6. Transfer the mixture to a warmed serving dish and sprinkle over the spring onions (scallions). Serve at once.
