method
1. Place the flour, salt, butter and sugar into the processor bowl and process for 10 seconds.
2. With the machine still running add the beaten egg and vanilla essence and mix to a very stiff dough. (Add more egg if required).
3. Turn out onto a floured surface and knead the dough until smooth. Chill.
4. Roll out the dough fairly thinly and cut into rounds with a plain or flutted cutter.
5. Place on a greased baking tray and prick biscuits well with a fork. Place a halved glace cherry into the centre of each biscuit. Chill.
6. Bake in the centre of the oven at 180°C, 350°F, Gas No. 4 for about 10 minutes or until a pale golden brown.
7. Allow to cool for 2-3 minutes before transferring onto a wire cooling rack.

The biscuits taste great but i found i had to add quite a bit more flour to the dough to make it workable enough to knead witout sticking to my fingers....still its fun playing with sticky dough doh:-)
