3 ripe pears, peeled and cored

method
1. Cut pears into 1/4 inch (5 mm) slices lengthways, sprinkle with a little lemon juice. Arrange on a bed of endive and radicchio.
2. Crumble cheese over pears. Mix lemon juice, mustard and vinegar with seasoning. Add olive oil and mix well.
