Baked Ling and Courgettes

ingredients

serves 4
4 ling fillets, trimmed and skinned
1 tablespoon olive oil
1 medium onion, finely sliced
1 lb (500g) courgette (zucchini)s, cut into 1/4 in (0.5cm) slices
Freshly ground black pepper
1/2 tablespoon oregano or basil, chopped
Juice of 1/2 lemon
4 tomatoes, thickly sliced
2 cloves garlic, crushed
4 oz (125 g) Gruyere cheese, grated

method

1. Pre heat the oven to gas mark 5, 375°F (190°C).

2. Wash the fish fillets and pat dry with kitchen paper.

3. Lightly oil a shallow baking dish and place in it the onion and half the courgettes, then arrange the fish fillets on top.

4. Sprinkle with a little freshly ground black pepper, half the herbs and a little lemon juice.

5. Cover with the remaining slices of courgettes and all the tomatoes.

6. Season with the remaining lemon juice and herbs, add the garlic and drizzle the rest of the olive oil all over.

7. Scatter the grated Gruyere over the whole dish.

8. Cover loosely with a sheet of oiled aluminium foil and bake in the ovenfor 20 minutes, or until the courgettes and fish are nearly cooked.

9. Remove the foil and return the dish to the oven for a further 5 minutes or until the cheese is bubbly and golden.
