2 lb (900 g) new potatoes, cooked in their skins, halved
8 oz (225 g) pepperoni or salami sausage, rinds removed, and sliced
1 tbsp snipped chives
4 hard boiled eggs
4 tbsps mayonnaise
method
1. In a salad bowl mix the potatoes, sausage and chives.
2. Remove the yolks from the eggs and press through a sieve.
3. Chop the whites finely, and sprinkle over the salad. Spoon the mayonnaise in the centre. Sprinkle over the egg yolk.
