method
1. Remove the outer leaves from the lettuce, wash gently and dry. Roughly chop and place in a bowl.
2. Trim the centre leaves and reserve. Chop the mint leaves, tomatoes and cucumber.
3. Add to the chopped lettuce. Mix the oil and lemon juice together and pour some into a small bowl.
4. Place the bowl in the middle of a large plate and stand the centre leaves in the bowl.
5. Pour the remaining dressing over the lettuce and mint mixture, toss, then spoon around the bowl on the plate.
