1 1/2 pints (900 ml) chicken stock
2 lettuces, roughly chopped
2 avocados, stoned and peeled
2 fl oz (60 ml) dry white wine
1 green chilli, seeded and finely chopped
5 fl oz (150 ml) soured cream
to garnish:
finely shredded lettuce
method
1. Boil stock and plunge in lettuces. Leave for 2 minutes. Allow to cool.
2. Mash avocados with a fork, stir in wine, chilli and seasoning. Add lettuces and stock and blend in a liquidiser or food processor until smooth.
3. Stir in soured cream. Chill, garnish and serve the same day.
