method
1. Trim and remove coarse stalks from the spinach and wash in several changes of cold water. Shake off excess water.
2. Melt 1 oz (25 g) of the butter in a large frying pan and stir fry half of the spinach leaves for about 2 minutes, until just wilted.
3. Fry remaining spinach in remaining butter. Toss together. Sprinkle with almonds.
