1. Rub the beef strips with the salt, pepper, ginger and cornflour (cornstarch).
2. Combine the soy sauce, oyster sauce, sugar and wine or sherry. Set aside.
3. Heat the oil in a large frying-pan. Add the onion and garlic and fry for 30 seconds, stirring constantly. Add the beef strips and fry for 2 minutes, stirring constantly. Pour off all but a thin film of oil from the pan. Pour in the reserved sauce and cook for a further 1 1/2 minutes, stirring constantly.
4. Transfer the mixture to a warmed serving dish and serve at once.
