Cucumber and Pork Soup

ingredients

4 servings
1 1/3 litre (2 1/4 pints) 5 3/4 cups Chicken stock
1 tsp Salt
1 Tbs Soy sauce
225 g (8 oz) Pork fillet (tenderloin), cut into very thin strips
2 Medium cucumbers, peeled, halved lengthways, seeded and cut into 1/2 cm (1/4 in) slices

method

1. Pour the stock, salt and soy sauce into a large saucepan and stir in the pork strips.

2. Bring to the boil over moderate heat and cook for 10 minutes. Add the cucumbers to the pan and return to the boil.

3. Cook for 3 minutes, or until the cucumbers are translucent.

4. Transfer the soup to a warmed tureen and serve at once.
