Green Goddess Dressing is one of those delicious dressings which has mayonnaise as its base— and added to it are anchovies, spring onions (scallions), herbs and sour cream. It is often served with a mixed salad, and it makes an excellent filling for baked
250 ml (8 fl oz) 1 cup Mayonnaise
3 Anchovy fillets, finely chopped
3 Spring onions (scallions), finely chopped
2 Tbs Finely chopped parsley
2 tsp Finely chopped fresh tarragon
1 Tbs Tarragon vinegar
Black pepper to taste
150 ml (5 fl oz) 5/8 cup Sour cream
method
1. Combine all the ingredients, except the sour cream, and beat well until they are thoroughly blended. Fold in the sour cream.
