Candied sweet potatoes

This is the traditional accompaniment to the Thanksgiving turkey in the United States, and has been popular since Cape Cod was first colonized.

ingredients

serves 4
1 kg (2 lb) Sweet potatoes, boiled for 20 minutes, drained and thickly sliced
75 g (3 oz) 6 Tbs Brown sugar
125 ml (4 fl oz) 1/2 cup Maple syrup
50 ml (2 fl oz) 1/4 cup Lemon juice
1 tsp Grated lemon rind
25 g (1 oz) 2 Tbs Butter
Salt and pepper to taste

method

1. Preheat the oven to moderate 180°C (Gas Mark 4,350°F).

2. Arrange the sweet potato slices in one layer if possible in a well-greased medium-sized baking dish.

3. Combine the sugar, syrup, lemon juice and rind and pour over the potato slices. Cut the butter into small pieces and dot over the slices. Season to taste.

4. Put the dish into the oven and bake, basting frequently, for 30 minutes, or until the potatoes are well glazed. Serve at once.
