2 - 2 1/2 lb (1-1.25kg) fresh anchovies, gutted, with heads left on
Olive oil
Freshly ground black pepper
2 - 3 tablespoons oregano, chopped
Juice of 1 lemon
method
1. Pre heat the oven to gas mark 7, 425°F (220°C).
2. Wash the anchovies and pat them dry with kitchen paper.
3. Lightly oil a shallow baking dish with olive oil and lay the fish in it side by side.
4. Sprinkle over a good grinding of black pepper, 'the oregano and the lemon juice.
5. Drizzle a little olive oil over the fish just enough to give a glaze - then bake in the oven for 10 to 15 minutes, or until they are cooked.
