method
1. Put the flour into a mixing bowl and make a well in the centre.
2. Pour in the oil and, using a balloon whisk or wooden spoon, beat it thoroughly into the flour.
3. Add the beer gradually, beating from the outside of the bowl towards the centre.
4. Set aside until you are ready to cook, then whisk the egg whites fairly stiffly and fold them into the batter.
Use straight away.
