Any type of yogurt can be used for this very quick and easy recipe, and there are many varieties to choose from.
300 g (10 oz) natural yogurt
150 ml (5 fl oz) fresh double cream
3 ripe bananas, mashed
grated rind and juice of 1 lemon
15 - 30 ml (1 - 2 tbsp) caster sugar
1 egg white
grated lemon rind and fresh mint leaves, to decorate
1. in a large bowl, whisk the yogurt and cream together until lightly stiff, then stir in the bananas, lemon rind and juice and sugar to taste.
2. in a medium bowl, whisk the egg white until stiff, then fold gently into the mixture. Chill until ready to serve.
3. Pour into 4 glass dishes, and serve, decorated with lemon rind and fresh mint leaves.
