Prepared with either raw or cooked prawns, this is an incredibly delicious starter that is extremely easy to cook.
ingredients
900 g (2 lbs) cooked prawns in their shells
2 cloves garlic, crushed
2.5 cm (1 inch) piece fresh ginger, finely chopped
15 ml (1 tbsp) chopped fresh Chinese parsley (coriander)
45 ml (3 tbsps) oil
15 ml (1 tbsp) rice wine or dry sherry
25 ml (1 1/2 tbsps) light soy sauce
Chopped spring onions to garnish
method
1. Shell the prawns except for the very tail ends. Place the prawns in a bowl with the remaining ingredients, except for the garnish, and leave to marinate for 30 minutes.
2. Heat the wok and add the prawns and their marinade. Stir-fry briefly to heat the prawns.
3. Chop the onions roughly or cut into neat rounds. Sprinkle over the prawns to serve.
