Gluten Free Coleslaw

ingredients

1.2 lb (225 g) finely shredded white cabbage
1 oz (28 g) very finely sliced onion or spring onion
6 inch (15 cm) dulse, rinsed and finely sliced (optional)
4 oz (110 g) diced fresh apple
1 oz (28 g) soaked sultanas (optional)
Pinch of fennel seed (optional)

optional dressings:

Apple juice, apple cider vinegar, brown rice vinegar, French Dressing, 1 tablespoon natural yogurt

method

1. Mix the ingredients in a bowl. This will keep in a covered container for 1 - 2 days in the refrigerator but is best used fresh.
