Wheat Free Kirkintilloch Slices

ingredients

1 1/2 oz (45 g) butter and 1 1/2 fl oz (45 ml) oil or 3 oz (85 g) dairy-free margarine
2 oz (55 g) Muscovado or Barbados sugar
3 oz (85 g) barley flour
1 teaspoon baking powder
2 eggs
5 oz (140 g) chopped dates
2 oz (55 g) sultanas
2 oz (55 g) chopped walnuts

method

1. Cream the butter, oil and sugar. Mix the flour and baking powder.

2. Beat one egg and half of the flour into the butter mixture, then the other egg and the rest of the flour. Mix in the chopped fruit and the walnuts.

3. Put into a greased Swiss roll tin and bake for 20 minutes at 375°F (190°C) gas mark 5. When cold, cut into slices.

Not actually gluten free

I just thought that I should point out that Barley flour contains gluten. So, while wheat free, this recipe is not gluten free.
