Orange Flower Water Junket recipe

Rennet essence is available in bottles from supermarkets and delicatessens.
ingredients
2 pints (1.1 litre) fresh skimmed milk
2 tbsp caster sugar
1 tsp rennet essence
few drops of orange flower water
2 tbsp caster sugar

method
1. Place the milk and sugar in a saucepan and stir over a gentle heat until the sugar has dissolved.
2. Remove from the heat and allow to cool slightly until lukewarm.
3. Stir in the rennet and the orange flower water and pour into a serving bowl.
4. Leave the junket to stand at room temperature for a bout 2 hours until set.
