Leek and Broccoli Sauce

Peel the outer skin from the broad beans for a bright green colour.

ingredients

serves 6
4 oz (125 g) quark
3 tbsps double cream
2 tbsp chopped watercress
1 tbsp (15 ml) fresh chopped parsley
2 oz (50 g) butter
2 large leeks, trimmed and sliced
8 oz (225 g) broccoli, broken into tiny florets, steamed
8 oz (225 g) frozen broad beans, thawed

method

1. Mash the quark with the cream and stir in the watercress, parsley and seasoning.

2. Melt the butter in a frying pan and fry the leeks until soft. Add the broccoli, cook for 2 minutes.

3. Then add the broad beans and fry, stirring, for 1 minute. Stir in the quark mixture.

4. Serve with freshly boiled pasta.
