Mulligatawny (made with Turkey drumsticks)

ingredients

serves 8
2 onions, finely chopped
1 carrot, diced
1 dessert apple, diced
2 tbsp oil
1 1/2 tbsp curry powder
2 pints (1.2 litres) beef or chicken stock
5 oz (150 g) natural yogurt
2 roast turkey drumsticks, skinned, boned and diced
4 oz (125 g) green beans, cut into 1 inch (2.5 cm) lengths

to garnish:

fresh chopped parsley

method

1. Fry onions, carrot, apple and curry powder in oiI for 5 minutes. Add stock and yogurt.

2. Simmer for 1 hour. Add turkey and beans.

3. Simmer for 15 minutes. Serve hot with parsley.
