Chow chow (also called chayote, vegetable pear or christophine) could be replaced with courgettes or cucumber.
ingredients
1 chow chow, peeled, stoned, and sliced lengthways
juice of 1/2 lemon
1 x (14 oz/397 g) can tomatoes, drained and sieved
2 tbsps Greek yogurt
1 tsp paprika
1 small fresh green chilli, deseeded and very finely sliced
method
1. Sprinkle the chow chow with lemon juice and steam for about 10 minutes or until tender.
2. Cook the tomatoes in a large frying pan until thick and pulpy.
3. Stir in the yogurt and paprika.
4. Transfer the steamed chow chow to a heated serving dish, pour over the creamy tomato sauce and garnish with chilli.
