Endive, Goat's Cheese And Walnut Salad

ingredients

serves 6
1 curly endive
5 oz (150 g) walnut halves
6 oz (175 g) goat's cheese, cubed
1 tbsp cider vinegar
3 tbsps walnut oil

method

1. Trim the curly endive, wash gently and dry. Break off into sprigs. Place in a salad bowl with the walnuts and goat's cheese. Beat the vinegar with seasoning, then beat in the oil.

2. Pour the dressing over the salad and toss well. Serve at once.
