Use for fresh salmon steaks, rainbow trout, plaice or whiting, prawns or chicken.
8 fl oz (250 ml) dry white wine
2 fl oz (60 ml) olive oil
2 shallots or 1 small onion, finely sliced
1 garlic clove, peeled and crushed
juice of 1 small lemon
1 tsp chopped fresh tarragon or dill
6 black or green peppercorns, crushed
Mix all ingredients together and pour over fish or meat.
