1. Mix the flour and salt together and rub in the fat with the fingertips until the mixture resembles fine crumbs.
2. Mix in the sugar. Add the egg, stirring until the ingredients begin to stick together, then with one hand collect the mixture together and knead very lightly to give a firm, smooth dough.
3. Roll out and use as required. Makes enough pastry to line a 15 cm (6 inch) flan ring.
