Chinese Leaves with Peanut Dressing

ingredients

serves 4 - 6
1 head Chinese leaves
2 tbsps crunchy peanut butter
2 tbsp white wine vinegar
4 tbsps olive oil

to garnish:

lemon wedges

method

1. Separate the leaves, wash gently and dry. Tear diagonally across the leaves into thickish strips. Place in a salad bowl.

2. Place the peanut butter, wine vinegar and olive oil in a small pan and heat gently, stirring. Pour over the salad and toss.

3. Garnish with lemon wedges.
