Dry Spice Marinade recipe

Use to rub into scored fat of pork.
ingredients
1 tbsp juniper berries
1/2 tsp black peppercorns
1/2 tsp allspice berries
1 tsp dried thyme
3 to 4 blades of mace
pinch ground bay leaves
5 oz (150 g) coarse sea salt

method
In a pestle and mortar grind the herbs and spices. Add the salt and grind briefly. Rub into the scored fat of pork.
