4 cod steaks, about 1 inch (2.5 cm) thick
1/2 inch (1 cm) fresh ginger root, peeled and shredded
2 oz (50 g) button mushrooms, halved
2 tbsp gin
pared rind and juice of 1/2 orange
method
1. Arrange the fish in a single layer on a plate, sprinkle over the ginger and mushrooms.
2. Mix the gin with the orange rind and juice and pour over the mushrooms.
3. Cover and steam for 10 - 15 minutes or until the flesh just flakes.
4. Remove immediately and serve with rice or noodles and green vegetables.
