1. Place the flour in a large bowl and rub in the margarine or butter and shortening.
2. Mix in just enough water to make a firm dough. Use three quarters of the pastry to line a deep, 8 inch (20 cm) pie plate. Layer the apple and cheese into the pie case and sprinkle with the lemon zest, nutmeg and sugar.
3. Use the remaining pastry to make a lid for the pie.
4. Crimp the crust and brush the top with water. Sprinkle with a little more sugar.
5. Bake at Mark 6 (200°C) 400°F for 35 - 40 minutes until the pastry is golden.
