A classic combination of sprouts and chestnuts with a truly Chinese feel. As is the intention with all stir fried vegetables, the sprouts should stay crunchy. Serve with pork, gammon or turkey.
ingredients
1 lb (450 g) Brussels sprouts, trimmed
1 tbsp vegetable oil
1 small onion, finely chopped
2 tbsps sherry
2 tsp (10 ml) soy sauce
1 x (10 oz/300 g) can water chestnuts, drained and sliced
1 tbsp sesame seeds
method
1. Thinly slice the sprouts lengthways.
2. Heat the oil in a frying pan, add the onion and fry gently until softened.
3. Add the sprouts, sherry and soy sauce and stir fry for 1 - 2 minutes.
4. Add the chestnuts and toss until heated through.
5. Sprinkle with sesame seeds and serve immediately.
