Tortellini and Artichoke Pasta Salad

ingredients

4 whole marinated artichoke hearts
1 10oz pkg cheese or chicken stuffed tortellini
2 to 3 tbspp roasted red pepper or pimento, diced
4 tbsp reduced calorie mayonnaise
1 tbsp dijon mustard
1 tbsp parmesean cheese, grated
2 tbsp basil, chopped
2 tbsp parsley, chopped
salt and pepper

method

1. Cook tortellini, rinse and drain well.

2. Toss with 1 tbspp of the marinated artichoke liquid to keep from sticking together.

3. More may be added for flavoring of desired.

4. Drain artichokes Cut into chunks.

5. Combine remaining ingredients and toss gently in a large bowl to combine.

6. Refigerate if not served immediately.
