Chicken and Broccoli Chowmein

ingredients

serves 4
2 tbsp vegetable oil
2 chicken breasts, skinned and boned
4 oz (125 g) broccoli florets
1 carrot, thinly sliced
4 oz (125 g) mange tout
2 spring onions, thinly sliced
1 tbsp soy sauce

method

1. Heat the oil in a wok or heavy frying pan until smoking. Cut the chicken into strips and stir fry for 2 minutes.

2. Remove with a slotted spoon and keep warm, add the broccoli and carrot and cook for a further minute.

3. Add the mange tout and soy sauce. Return the chicken. Toss well.

4. Serve immediately with egg noodles.
