Fruit Fool

ingredients

serves 4
8 oz (225 g) dried apricots, soaked overnight
10 oz (300 g) natural yogurt
2 - 3 tbsps apricot brandy (optional)

method

1. Puree the apricots in a food processor with the yogurt until smooth. Stir in the apricot brandy, if using.

2. Spoon into individual glasses and swirl a little more yogurt on the top. Decorate with edible leaves (we used rose petals) and pieces of apricot.
