Devilled Chicken Livers

ingredients

serves 6
1 oz (25 g) butter
1 lb (450 g) chicken livers, halved and trimmed
1/2 tsp mild curry powder
1 tbsp Dijon mustard
2 tsp Worcestershire sauce
5 fl oz (150 ml) chicken stock

to garnish:

2 oz (50 g) long grain rice, cooked and kept hot; 4 spring onions, finely chopped.

method

1. Melt the butter in a pan, add the chicken livers and fry, stirring gently, for 2 minutes.

2. Stir in the curry powder, mustard, Worcestershire sauce and seasoning. Add the stock and cook over gentle heat, stirring, for 5 minutes.

3. Mix the rice with the onion. Serve livers on individual plates, garnished with the rice.
