Petits Pois A La Franchise (Peas with Onions and Lettuce) recipe
ingredients
1 oz (25 g) butter
4 shallots or 6 spring onions, finely chopped
2 fl oz (60 ml) hot chicken stock
1 lb (450 g) frozen petits pois
1 small lettuce, shredded
method
1. Melt the butter and fry the shallots or spring on ions over a very gentle heat until softened and transparent.
2. Add the stock, peas and lettuce and bring to the boil. Simmer, uncovered, for 2 minutes. Serve immediately.
