2 3/4 lb (1.25 kg) fondant icing
8 fl oz (240 ml) water
10 lb (4.5 kg) selected fruits in season, washed and dried
method
Place the icing in a bowl with the water. Set the bowl over a pan of gently simmering water and heat gently to melt, stirring. Dip the fruit into the fondant and place on non stick baking paper to dry.
